Pico De Gallo
An easy topping for fish, meat, beans, eggs or just good ole’ chips, pico is also good for you, thanks to all of the healthy benefits from the ingredients below.
1 cup Campari tomatoes, chopped (any kind of sweet tomatoes will do, like grape, cherry, heirloom or roma)
½ medium onion, diced
½ lemon, juiced
½ jalapeno or serrano pepper, seeded and minced
3 small garlic cloves, minced
2 tablespoons cilantro, chopped
1 teaspoon salt
Add ingredients and mix. Salt more to taste. If you can let it set an hour, the flavors will elevate the taste of the pico.
Serve with chips or your favorite dish. We also add to avocado to make guacamole.
Time: 10 minutes prep. Serves 4.
