Cool California Chili

Although we are from Texas, where chili is an art form, we have modified our favorite chili recipe to lighten it up and make it healthier. Note: real Texas chili has no beans.  Our Cool California Chili is made vegetarian-style with beans or additionally with ground turkey, whichever you prefer. The coolness comes from Greek yogurt instead of sour cream. See that, healthier!

Beans are a great protein alternative, and tomatoes and onions are full of antioxidants.  The spice in the chilies helps fight disease, boost your metabolism and burn fat. So try this spicy, flavorful version and be cool.  😀

 

 

Recipe

 

1 tablespoon olive oil

2 packages ground turkey (optional)

1 15 oz. can kidney beans

2 15 oz. cans black beans

2 28 oz. cans crushed tomatoes or the equivalent in fresh tomatoes, coarsely chopped

1 4 oz. can diced green chiles

1 medium jalapeño, seeded and diced

1 large onion, diced

1 bottle Corona Light beer

Chili Seasoning:

(in lieu of fresh spices, you can use 2 packages of pre-made hot chili mix)

1 tablespoon Chili powder

1 teaspoon paprika

1 teaspoon cumin

1/2 teaspoon cayenne pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon coarse sea salt

1/2 teaspoon fresh ground black pepper

Add additional salt and pepper to taste

Garnish:

diced green onions

Greek yogurt

 DIRECTIONS

Chop onion and saute in olive oil on medium heat in large soup pot until soft, 3-5 minutes. Add diced jalapeño and cook 2-3 minutes.  If using ground turkey, in a separate pan, saute on medium heat until cooked, then add to soup pot.  Add diced chiles, tomatoes, beans and beer.  Add spices and bring to boil.  Lower heat to simmer for three hours.

Garnish with diced onions and Greek yogurt. If adding cheese, use a light cheddar.
