Spanish Rice

 

This savory rice dish is great with any type of  food. With a nice hit of spice, the flavors will entertain every single one of your taste buds. Salute!

Recipe

2 tablespoons oil (your preference, we recommend canola)

1 medium onion, chopped

2 large garlic cloves, minced

1 can Rotel Tomatoes and Diced Green Chilies

2 16 oz. container of chicken broth

2 cups rice – arborio or long grain brown rice

1 generous pinch of saffron

1 teaspoon cayenne pepper

1 teaspoon cumin

1 teaspoon Sea Salt or Kosher Salt

Black pepper to taste

Fresh cilantro

 

DIRECTIONS:

In a large pan, sauté onion until soft, 2-3 minutes. Add garlic and rice and stir for 5 minutes, until rice begins to brown.  Add tomatoes and chicken broth.  Add spices and slowly bring to a boil.  Turn heat to low and let simmer for 20 minutes.  You may need to add additional broth until the rice is cooked.  Add chopped cilantro, stir and serve.
