Cha Cha Cha Chia Pudding
Chia seeds are an incredibly easy way to incorporate fiber into salads, smoothies and more. Here’s a different take, a luscious breakfast pudding. Just remember a little bit of chia goes a long way, so know how your body reacts to it before consuming a lot of it.
1 cup unsweetened vanilla almond milk
1 cup plain Greek yogurt
2 tablespoons organic blue agave
1 tablespoon organic maple agave syrup
1 1/4 teaspoon vanilla extract
1/8 tsp. Kosher salt
1/2 teaspoon cinnamon
1/4 cup chia seeds
1 cup sliced strawberries
1/2 cup blueberries
DIRECTIONS:
In a medium bowl, lightly whisk the almond milk, agave, syrup, yogurt, vanilla and salt. Add chia seeds and refrigerate for one hour. Stir if chia seeds have settled to the bottom and re-distribute. Refrigerate overnight.
Remove from refrigerator and place into 1 cup serving bowls. Fill bowls halfway with chia seed pudding and top with fruit. Serve and enjoy! Optional; add sliced almonds or crushed walnuts for more protein.
