Easy Chilequiles


Ever have one of those days where you just think, what on earth will I make to feed my family today? Of course you do, probably multiple times a week. We all do, right?

 

The other morning before I got up, I was thinking about what we had in the fridge and how to make a great healthy breakfast for my hardworking SuperHubs. Most weekends he makes breakfast for me, but he was overly tired and I wanted to make something delicious. I am always trying to “use what we’ve got” instead of going to the store to buy more stuff. I HATE wasting food, so this morning I was inspired by the tomatillo salsa I had made earlier in the week for an evening dinner.

 I went with Chilequiles, which is eggs, typically corn tortillas, green chiles and I made some black beans to have on the side. I threw in some onions and garlic, some gorgeous tomatoes and cilantro. All of these things have various healthy properties, including antioxidants and cancer-fighting compounds. Here’s the result, quick, easy and delicious!

EASY CHILEQUILES

5 organic eggs
3 sliced pearl tomatoes
1/2 onion, diced
1/2 small can diced green chiles
1/2 cup Mexican shredded cheese
1 tablespoon olive oil
1 bunch cilantro
Salt and Black Pepper to taste

DIRECTIONS:

In a large frying pan, add onions, add salt and then add diced chiles to oil on medium heat. Saute until soft, 1 to 3 minutes. Spread to outside edges of the pan and add eggs. Cook uncovered 1-3 minutes at lower heat, then add tomatoes. Cover for 1-2 minutes until eggs are cooked to your desire. Add cheese and let melt for 1 minute. Garnish with cilantro and tomatillo salsa. Serve over corn tortilla chips or corn tortillas.

BEANS:

1 can black beans, drained
1/4 onion diced
1/2 can diced green chiles
1 clove garlic, minced
1 hearty tablespoon cumin
1 tablespoon olive oil

Saute onions and chiles in oil until soft, 1 to 3 minutes. Add garlic, cumin and beans, and let simmer until flavors have married. Serve with garnish of cilantro and sour cream (or healthy version – plain Greek yogurt).
