Healthy Lettuce Wraps

It’s not easy to find healthy things to eat in a hurry. When you get home from work, you’re beat, and you just want whatever’s easiest. This is a filling yet light dish that’s simple and quick so you can make it in advance and then throw it together when you need it. Just the perfect combination to feed those hungry mouths at home.

 

All the credit for this one goes to the other chef in our house, SuperHubs. One of his most favorite foods is Asian, so anything in that arena is a winner for him. He’s also masterful with a wok and flipping veggies. Talents!

 

1 tablespoon olive oil

1 lb. ground turkey

2 garlic cloves, minced

1 medium yellow onion, diced

2 tablespoons soy sauce

1/4 cup hoisin sauce

1 tablespoon rice wine vinegar

1 tablespoon freshly grated ginger

1 teaspoon Sriracha

1 8 0z. can water chestnuts, drained and chopped

2 green onions, thinly sliced

Salt and Black Pepper

1 head butter lettuce

 

DIRECTIONS:

Heat olive oil in large frying pan over medium heat. Add ground turkey, season with salt and pepper. Brown until done and drain excess fat.

 

Add garlic, onion, ginger, soy sauce, hoisin sauce, rice wine vinegar and Sriracha and stir until onions are soft, about 1-2 minutes.

 

 

Add chestnuts and green onions, cook until tender about 1-2 minutes.

 

 

Season to taste with more salt and pepper.

 

 

 Wash lettuce and dry. Add mix to lettuce leaves and serve.
