Roasting Butternut Squash

Here are step by step instructions on how to roast butternut squash.  We use this in many dishes.  It is easy to roast, extremely good for you and delicious!  Give it a try!

 

 

Cut squash into halves and remove seeds.

Place on a foiled cookie sheet and lightly drizzle olive oil.  Season with salt and pepper.

Place in the oven and roast at 400 degrees for 30 to 40 minutes. Flip them over at 15 minutes.  When they are done, they will be soft.  Remove and cool.

You can mash and add a bit of milk or heavy cream as side to proteins, create soups, casseroles, muffins, risotto, even pies.  Use as you would pumpkin or sweet potatoes. You can also separate into freezer bags and keep in the freezer until needed.  It is very versatile and chock full of goodness!
