BBQ Redux


If you had a BBQ over the weekend and aren’t sure how to repurpose those leftovers, let us give you a few ideas.

Maybe you had or attended a great BBQ with family and friends (like we did) but aren’t sure what to do with all of that leftover food. Here’s a few tips from us! First of all, our BBQ had a Tex-Mex theme, so we made beef and chicken fajitas, roasted veggies, spicy frijoles, Southwestern Salad and queso. The night after, I made a great beef fajita salad with lettuce, leftover fajita meat, leftover veggies, salsa, avocado and cilantro. It was so good and there was no worry about tortillas (although there might have been chipsĀ  šŸ™‚ ). Also, the one-day old sangria was terrific, thanks to the overnight flavoring of all of the fruit.

Two days after, I made a Chicken Picante. I seared two chicken breasts that I had in the freezer, then cooked them in the frying pan coveredĀ for 20 minutes.Ā IĀ melted Mexican cheese over both and topped with salsa, avocado, the rest of the roasted veggies and garnished with cilantro. Similar but with a different spin. Now we are pretty much out of leftovers, but man, SuperHubs was a happy camper for the last three days. And that is what it’s all about!
