Cauliflower Puree

 

This is a simple dish that is a great substitute for mashed potatoes.  Cauliflower is a great cruciferous vegetable and a cancer fighter.  It’s also full of Vitamin C, Vitamin K, antioxidants and anti-inflammatories.  Try it, we promise you will like it 🙂

Recipe

 

1 tablespoon olive oil

1 medium onion

2 cloves of garlic

1 head of cauliflower

One cup vegetable broth

Salt and pepper to taste

 

Directions:

Add oil to large saucepot and add onion. Saute for 5 minutes; add garlic. Stir frequently for 2 minutes;  add chopped cauliflower and vegetable stock broth.  Cook covered on low heat for 30 minutes.

 

Place in food processer or blender without broth and blend. Season with salt and pepper to taste.
