Crockpot Series: Texas Queso x 2

 


You asked for it, you’ve got it! This month kicks off our crockpot series, and our theme is TexMex (our faves, just a little biased there).  Every week, we’ll give you a crockpot recipe, starting with an easy one – and one you’ll thank us for, seriously. If you have never tried it, your life is about to change for the better. So let’s get this party started!

Let’s be honest.  SuperHubs is the undisputed King of Queso around these parts, but then we live in SoCal and they don’t make stuff like that around here. That’s a Texas delicacy.  However, as good as it is (and it is REALLY good), we whipped a lighter version that’s less fattening but still delicious.  We are including the original recipe, too, for those purists.  This is a party stalwart, so don’t be shy, get on up in there (Texanism).  Always best to serve with guacamole, our Pico de Gallo and our Agave Margaritas. Or if you are going true TexMex, make those frozen. Enjoy!

Recipe

K’S ORIGINAL TEXAS QUESO

1 32 oz. package of Velveeta cheese

2 10 oz. cans RoTel tomatoes

1 package breakfast sausage (we suggest spicy)

A’S QUESO LUZ

1 32 oz. package of Light Velveeta cheese

2 10 oz. cans RoTel tomatoes

1 package turkey or vegan sausage

DIRECTIONS:

 

Brown sausage in a pan and drain.  Add cheese to crockpot and cut it up in 5 to 6 large chunks. Add tomatoes and sausage.

Turn crockpot to low to medium heat and stir occasionally until blended. Be careful not to burn (this is why low to medium heat is important).

Serve warm with tortilla chips, salsa and guacamole. Great addition to burritos, tacos and fajitas.
