Easy Niçoise Salad

Out of ideas to make your salad interesting? Here’s how the French do it.

 

If you have ever had the joy of meandering through the streets of Paris and stumbling into some charming brasserie to sit down to this dish, you’ll know where I get my inspiration for it. And if you haven’t yet, please try one at your nearest French restaurant or make this easy version at home. Fresh, nutritious ingredients with a bit of protein and a light oil and vinegar dressing kick your same old salad up a notch and tantalize your taste buds.

Easy Niçoise Salad

Recipe
1 cup green beans, trimmed
3 to 5 red potatoes
2 cups green leaf lettuce
1 cup grape tomatoes, halved
4 hard boiled eggs
1 large can albacore tuna
Olive Oil
Red wine vinegar
Salt + Pepper

 

DIRECTIONS:

Steam the green beans in the stove or microwave for 4 to 5 minutes. For potatoes, insert fork all the way around before placing in microwave to cook for approximately five minutes (turning over once). Cut in halves or thirds, depending on preference. Place both on top of greens. Add tomatoes, eggs, tuna and salt & pepper. Dress lightly with olive oil and vinegar. Serves two.
