Pancetta Pasta with Peas


This easy pasta dish is creamy, savory and absolutely mouthwatering, thanks to the pancetta. Just watch your portion sizes, as you may want to eat the whole thing!

We like the pancetta from Trader Joe’s. Large enough to get the flavor but not too much to make the dish too rich.

1 medium sweet onion, diced
1 4 oz. package pancetta
1 cup frozen peas
3/4 cup organic heavy cream
1/4 cup light white wine
1 tablespoon olive oil
Sea Salt and Fresh Ground Pepper
1/4 cup Shredded parmesan cheese
1/3 teaspoon cracked red pepper
1 cup bow tie pasta

 

DIRECTIONS:

In large saucepot, cook pasta according to directions, 8 to 10 minutes until al dente. Reserve 1/4 cup pasta water. Drain pasta and set aside. In large saucepan on medium heat, add oil and onions. Saute onions until soft, 3 to 4 minutes. Add pancetta and cook another 3 minutes, stirring occasionally. Add cream and wine and let simmer 10 minutes. Add peas and stir, let simmer another 2 minutes. Add salt and pepper, season to taste. Mix in reserved pasta water and pasta, let simmer 3 to 4 minutes. Add parmesan and cracked red pepper and serve.
