Pumpkin Bacon Cream Soup
Check out this decadently delicious hearty warm winter dish. Both savory and sweet, our Pumpkin Bacon Cream Soup will have your dinner guests raving for more.
1 tablespoon olive oil
2 cans pumpkin puree
4 to 5 pieces bacon
1 medium onion
3 tablespoons organic agave
3 tablespoons organic maple syrup
1 cup organic heavy cream
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
1 teaspoon salt
3 cups chicken or vegetable broth
Sage for garnish
DIRECTIONS:
Saute onions in olive oil until soft, 5 minutes. Separately, cook bacon until crisp (we bake it on a rack in the oven).
In saucepan, add onions, bacon, pumpkin puree, and broth. Bring to low boil. Add spices, agave and syrup and stir.
Add cream slowly, continuously stirring. Let simmer for 20 minutes. Stir occasionally to keep cream from burning.
Serve with sage garnish.
