Quick Quinoa & Cauliflower Salad


This has been my new jam for lunch. Super delicious, healthy and filling. That’s a triple threat right there. I love quinoa, I love salads and I love veggies so this hits all my buttons here. It’s inexpensive to make and lasts for a few days – perfecto.

Just roast some cauliflower, whip up some quinoa and throw it all together with some grapes and raw roasted cashews, add some of your favorite lettuce and you are good to go. I don’t usually even need dressing on it, because the grapes make it sweet. Let us know what you think!

Recipe
1 head cauliflower
1 cup quinoa, cooked
1 cup raw cashews
1 cup sliced grapes
1 small head of lettuce

DIRECTIONS:

Roasted Cauliflower

Cut up one head of cauliflower and chop into 1 to 2 inch pieces. Throw in a mixing bowl, toss with one tablespoon olive oil and a pinch of sea salt. Roast in the over for 20-30 minutes at 400 degrees.

Quinoa

Cook via package directions but instead of water, add chicken broth. Season well with salt and pepper.
