Roasted Potatoes

Potatoes get a bad rap.  They have more potassium than a banana, Vitamin C, fiber, and iron. Cholesterol, sodium and fat free, one medium potato has just over 100 carlories.  It’s how they are prepared where things can go awry.  These potatoes are roasted in the oven, use two ingredients and are done in less than half an hour.  They are also an easy side dish with powerhouse flavor. We use organic Fingerling or Baby Red Potatoes.

Recipe

 

1 lb. Fingerling or Baby Red Potatoes

1 tablespoon Olive oil

1 teaspoon sea salt

Pepper to taste

Preheat oven to 400 degrees.

Slice potatoes in half.  Toss potatoes into a mixing bowl.  Add olive oil and sea salt and mix with your fingers.

Line a cookie sheet with aluminum foil and lay each half of the potato upwards on cookie sheet.

Put in oven and roast for 15 minutes.  Take them out and turn them over for another 10 minutes.  Remove and garnish with parsley.  Serve warm.

 

Time: 10 minutes prep, 25 minutes to cook. Serves 4.
