SuperHubs’ Chicken Noodle Soup

My SuperHubs is quite a cook, and his chicken noodle soup is what he wants every time he gets sick. It is hearty, delicious and the cure for what ails you, I promise. Check out the recipe below and if you make it, let us see your soup!!

Recipe

 1 cup sliced celery
1 cup thinly sliced carrots
1 onion, chopped
4 chicken bouillon cubes
1 1/2 teaspoon salt
1/2 teaspoon pepper
2 bay leaves
2 1/2 to 5 lb. whole chicken, cut up
12 to 14 cups of water
2 cups egg noodles

DIRECTIONS:
In a large soup pot, combine chicken and water. Bring to a boil, reduce heat, cover and simmer for 15 minutes. Skim off any froth that rises to the surface and dispose. Add bouillon cubes, 1/2 cup of onion, salt, pepper and bay leaves. Simmer covered an additional 35 to 45 minutes or until chicken is tender.

Remove chicken from broth, and then pull off meat from the bones. Cut into bite-sized pieces. Skim fat from broth. Stir in celery, carrots and the remainder of onion. Bring to a boil and reduce heat.  Cover and simmer 15 minutes or until vegetables are tender. Return meat to broth. Remove bay leaves and bring to a boil.  Add noodles into broth. After broth returns to a boil, cook uncovered 5 to 10 minutes or until noodles are al dente. Serve immediately.
