Tomatillo Sauce y Salsa

Tomatillos are high in potassium, Vitamin C and other antioxidants, and low in fat and calories. My cousin Doris was kind enough to share her Mom’s recipe for tomatillo sauce with me (known around these parts as green sauce – original, right?), because I love it so much I could drink it.  Seriously.  I also use it as a salsa (pictured below).  It is easy to make, inexpensive and packs a flavorful punch. Thanks Doris!!

Recipe

1 lb. peeled and washed tomatillo

1 cup cilantro

2 serrano peppers, seeded (keep the seeds for a spicier version)

1 clove garlic, peeled

*optional ½ cup heavy cream

Boil the tomatillos in three cups of water until they turn dark green.  Add to blender or food processor with cilantro, serranos, and garlic.  Pulse until blended or chunky, based on preference.

 For the salsa, leave as is.  For the sauce, add cream before you pulse in the blender or food processor.

Salt to taste and serve.
