Tomato Me Crazy

 

Friends – This time of year makes me so excited because I LOVE tomatoes. Maybe it’s because I am half Italian, or maybe it’s because I spent every summer as a kid on my aunt and uncle’s farm where we picked the tomatoes fresh from the garden, or maybe it’s because they taste so delicious and are so good for you. I could eat them like candy.  😆 

 

I made this platter for a party. It was the first thing to go!


Tomatoes are high in antioxidants and lycopene, which are great for your immune system. They are also low in calories, high in vitamins A, C and K as well as B6, folate and thiamin, potassium and magnesium, among others. Basil is an anti-infammatory and a great source of iron on par with spinach. Burrata or mozzarella cheese has vitamin A, protein and is high in calcium. All good reasons to indulge!

 

Caprese with Burrata


We have started a little garden this year, and the herbs are popping. We’ve planted several different types of tomatoes to see what grows best in our new home, so in the meantime I am buying heirlooms from the market. At least a few times a week, I make a version of a caprese salad, which my family loves. Sometimes I use fresh mozzarella, sometimes burrata, but always fresh basil from the garden and whatever fresh tomato I have available.

 

SuperHubs planted the tomatoes in these hanging baskets, topped by marigolds. Pretty genius!

 

It’s so easy to make! Just slice some tomatoes of your choice, add mozz or burrata and a bit of basil. Drizzle a bit of olive oil and balsamic vinegar, with some fresh ground sea salt and black pepper and that is the makings of a delicious salad. It’s good for you, simple and fresh.
