Turkey Meatloaf

 

Who says meatloaf has to be made of meat? Our version is made from ground turkey, and is chock full of great vegetables. You could also skip the turkey and just use a “meaty” mushroom, like crimini or portobello. You can do a variation of your own on the sauce if you prefer something with less sugar.

 

 

Meatloaf:

1 medium sized onion, chopped

1 green bell pepper, chopped

1 cup chopped mushrooms

1 lb. ground turkey meat

1 ½ cups panko bread crumbs

1 egg

½ tsp. garlic powder

½ tsp. black pepper

 

 

Sauce:

1 teaspoon Worcestershire

1 tablespoon spicy mustard

¾ cup ketchup

¼ cup BBQ sauce

1 tsp. agave nectar

 

DIRECTIONS:

 

Preheat oven to 350 degrees and prepare a nonstick bread loaf sized pan with a coating of canola oil spray.

 

In a large mixing bowl, add onion, bell pepper, mushrooms, turkey, panko, egg and seasonings.  Mix well (using hands with gloves is easier) and add to a nonstick bread loaf pan (we use glass). 

 

In small mixing bowl, add Worcestershire, mustard, ketchup, BBQ sauce and agave and stir ingredients well until mixed.  Pour over the top of the meatloaf and coat evenly.

 

Add pan to preheated oven for 40 minutes.  Serve warm.

 

 

Time:  20 minutes prep, 40 minutes to cook.  Serves 4 to 6.
