Healthy Turkey Stroganoff

 

You are gonna love this great low calorie version of a stroganoff, which is usually made with sour cream and heavy cream. We substitute Greek yogurt for the sour cream and use less heavy cream with ground turkey instead of beef. A repeat offender in our home, this is one meal that SuperHubs is always happy to eat.  😛

 

Recipe

2 medium yellow onions

1 package ground turkey

1 10 oz. package of mushrooms (Baby Bella or Crimini)

1 tsp. Salt Lick seasoning (use regular salt & pepper if this spice mix is too spicy)

1 tablespoon Olive oil

½ cup Greek Yogurt

½ cup organic heavy cream

½ cup white wine (Sauvignon Blanc or Pinot Grigio)

1 ½ cup whole wheat pasta or egg noodles

If you like as an extra – add 1 cup peas 

1/2 cup parsley (for garnish)

 

DIRECTIONS:

Add ground turkey to chef pan with one tablespoon olive oil. Season with salt, pepper. Brown and set aside.

 Add sliced onions to pans (use the remaining brown bits of turkey) and sauté until brown. Add mushrooms and sauté until soft.

 Add Greek yogurt and heavy cream and stir until creamy. Add wine and cook down. Add additional seasoning if necessary. Simmer for 10 minutes at medium to low heat.

 Boil noodles in water with a pinch or two of sea salt. Drain and toss into sauce.

 Let simmer for 5 minutes and serve.

 

 

Time: 20 minutes prep, 30 minutes to cook. Serves 4.
