Zucchini Bread(cake)

This is a spin on my stepmother Barb’s zucchini bread.  I took out the processed sugar and used more natural ingredients, which makes it dense like a cake rather than light like a bread.  Either way, it is delicious!

Zucchini Breadcake

Recipe

3 eggs, beaten

1 cup organic applesauce

1 cup agave

1 cup slivered carrots

2 cups grated raw zucchini

3 teaspoons vanilla

3 cups flour

1 teaspoon baking soda

1 teaspoon salt

½ teaspoon baking powder

4 teaspoons cinnamon

*optional 1 cup chopped walnuts

 

DIRECTIONS:

In a large bowl, mix eggs, applesauce, agave, oil and vanilla.  In a separate medium bowl, add remaining ingredients.  Slowly add the dry ingredients to the wet ingredients and mix well with a mixer on low. 

 

Pour into two greased bread pans and bake 45-60 minutes at 350 degrees.
