Lovely Lentil Soup
This is a staple in our house. I will make a big pot of this on Sunday and use it all week for lunches. The lentils contain protein, fiber, and folates, not to mention all of the goodness of the veggies and it is so easy to make. Lentil soup is also very inexpensive to make, just a few ingredients and you have several meals.
Lentils have even been shown to have cancer-preventing properties, as do the onion, tomatoes and kale. So not only is it good for you (yay!), it is hearty and flavorful and tasty (did we say easy?? Worth saying again!).
2 tablespoons olive oil
1 medium onion, diced
3 stalks celery, diced (use the leaves too)
3 carrots, diced
1 package dried lentils, rinsed
1 12 oz. can diced tomatoes
1 to 2 cups chopped and de-stemmed kale
4 cups water
4 cups vegetable or chicken broth
4 bay leaves
Sea salt and black pepper
Directions:
In large soup pot, sauté onion, celery and carrots in oil until soft. Add a generous amount of salt.
Add tomatoes, lentils, kale, water and broth and bring to a boil.
Add seasoning and bay leaves and simmer for two hours or until lentils are soft. Serve warm.
