Brussels Sprouts with Bacon


 

Hey y’all. This is our go-to side dish and it’s super easy to make. We guarantee you will never think of brussels sprouts the same way again. And bonus – they are good for you! High in antioxidants, vitamins and minerals, these little guys are incredibly nutritious and are believed to protect from various cardiovascular diseases and prostate and colon cancers. So eat your vegetables!

Recipe

 

2 lb. brussels sprouts, de-stemmed, halved and quartered (depending on size)

4-5 pieces of bacon, cooked and diced 

1 medium onion, diced

2-3 tablespoons olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

 

DIRECTIONS:

Cook bacon (we bake it on a rack in the oven, or you can pan fry it or microwave it).

Saute onions in 1 tbsp. rendered bacon fat.

Toss brussels sprouts in olive oil and salt, then spread liberally on baking pan.

Roast brussels sprouts in 325 degree oven for 20 – 30 minutes.  After roasting, add to serving dish.  Add bacon bits, onion and balsamic vinegar and mix well.

Season to taste and serve.
