Split Pea Soup with Ham
Here’s a great cold-weather dish (or warm weather, for that matter!) that you can make for under $10. It’s also good for you.
How so? Well, it has dietary fiber (which also lowers cholesterol), Vitamin K, and potassium. Easy peasy!
This is a healthy soup that is simple to make and completely delicious. It can be made in a crockpot and left for four hours or in a soup pot on the stove.
1 lb. split peas (peas do not have to be soaked overnight)
1 lb. ham (diced)
2 medium carrots, peeled and diced
2 celery stalks, diced
1 medium onion, diced
4 cups chicken broth
1 tablespoon thyme
Salt and pepper
In a large saucepot or crockpot, add vegetables, peas, and meat. Add 4 cups of water and turn temp to high. Add thyme, salt, and pepper. Cover and simmer 4 hours.
At the end of four hours, use an immersion blender, blender, or food processor to pulse the soup until mixed. Don’t blend completely, as you want some good chunks of meat and vegetable. Serve warm.
