Basil and Tomato Sauce
Here’s a simple sauce that packs a lot of punch, both with antioxidants in the tomatoes, garlic and onions, but also with the flavor!
I have to double this recipe because it’s so yummy I always want more. If I don’t use it, I freeze it!
1 cup fresh cherry or grape tomatoes
1 tablespoon olive oil
2 cloves garlic
1 small onion
1 cup red wine (optional) – we prefer a red blend or pinot
½ teaspoon hot red pepper
Sea salt and fresh ground black pepper
Handful of fresh basil
1 cup whole wheat pasta
Romano cheese for garnish
Add pasta to boiling salted water and cook 8 to 10 minutes until al dente.
Wash tomatoes and basil thoroughly and de-stem.
Add onions to one tablespoon heated olive oil and saute for two minutes.
Add garlic and seasonings.
After 2-3 minutes, add tomatoes and lower heat.
Simmer for 5-8 minutes and add basil.
Stir and add to cooked pasta, garnish with cheese and serve.
Time: 5 minutes prep, 10 minutes to cook. Serves 2.
