Easy Egg Basket Breakfast Bagels

We all know how it is to wake up and need a quick, easy breakfast. If it’s healthy, too, then that’s an even bigger bonus.

We have the answer with these super easy egg basket breakfast bagels. It takes five minutes to prep and less than 10 minutes to cook.

You simply need a sheet pan, a few ingredients and you’ll have a delicious breakfast in no time!

Here’s how we did it:

Ingredients for Easy Egg Basket Breakfast Bagels
  • 2-4 bagel thins
  • 4-6 eggs
  • 1 qt. cherry tomatoes
  • Cheese of your choice – we used a three cheese blend here
  • Everything but the Bagel Seasoning
  • Salt and Pepper
  • Garnish:
  • 1/4 cup fresh parsley
  • 1/4 cup fresh mint
Directions for Easy Egg Basket Breakfast Bagels

  • Heat oven to 400 degrees.
  • On a sheet pan, add parchment paper.
  • Cut your bagel thins in half, and place on sheet pan.
  • Cut out a 1-inch border off the inner circle opening of the bagel thins to make more room for your eggs. Discard extra bread.
  • In a liquid measuring cup, crack eggs carefully. Add one egg to each bagel thin.
  • Add seasoning to your liking and top with tomatoes.
  • Sprinkle cheese on top and half of herbs.
  • Cook for 8-10 minutes, so egg is the softness you prefer.
  • Remove from oven and top with remaining herbs and a sprinkle of salt and pepper.
