Baby Bok Choy & Ginger with Sesame
A powerhouse of Vitamin C and Vitamin A (one cup has more than 100% of the daily recommended dietary allowance), Bok Choy is a light, flavorful and healthy Chinese cabbage – low in calories and high in antioxidants and other vitamins and minerals. Ginger is a an anti-inflammatory and cancer fighter while the sesame is good for cholesterol and fighting off free radicals. This dish is inexpensive and simple to make. It’s a regular on the menu at our house, either as a side, a meal on its own with a grain like quinoa or in a stir-fry. The crunch is divine!
1 tablespoon olive oil
1 ½ pounds baby bok choy
2 cloves garlic, minced
1 teaspoon fresh grated ginger
3 tablespoons water
Salt and pepper
½ teaspoon sesame oil
1 teaspoon sesame seeds
Wash thoroughly and trim off bottoms of stems. In a wok or pan, add oil, garlic and ginger. Heat to medium and cook until lightly brown. Add bok choy and toss. Add water, cover and let cook for one minute. Season with salt and pepper. Drizzle sesame oil and add sesame seeds. Serve immediately
Time: 5 minutes prep, 10 minutes to cook. Serves 4
