The Most Delicious Tomato Basil Bisque

Amanda’s Tomato Basil Bisque

This vegan bisque will delight your taste buds and satisfy that hungry tummy. Tomatoes give you healthy lycopene and antioxidants that fight diseases, so it’s satisfying and good for you. Give it a try and let us know what you think! 

 

5 medium tomatoes (Roma)

2 tablespoons of olive oil

1 cup of fresh basil

3 cloves of garlic

1 cup of vegetable broth or bullion

1 cup of almond, soy or coconut milk

Salt and Pepper

1/2 teaspoon of thyme, rosemary and oregano

1 tablespoon of nutritional yeast

 

DIRECTIONS

Preheat oven to 400 degrees.

Cut tomatoes in half and sprinkle with olive oil, salt and pepper.

Place on baking sheet with garlic.

Roast for 25 minutes.

Add roasted tomatoes, vegetable broth and basil into blender.

Blend until smooth puree.

Add to sauce pot and add nut milk.

Add herbs.

Bring to a boil, cover and let simmer for 15 minutes.

Add S&P to taste and garnish with croutons, vegan parmesan and fresh basil.

Pair with a vegan grilled cheese sandwich on sourdough!
