Try This Easy Smoky Eggplant Dip – It’s DELISH

Have you ever been intimidated by a vegetable? No? Just me then. 😳 Well, I discovered in my adulthood that I really love eggplant, but wasn’t sure how to cook it to make the things I like eating. One of those things is a smoky eggplant dip called Moutabbal, and I found a great recipe on one of my favorite sites, The Smitten Kitchen (sign up for her newsletter, it’s amazing!).

Add some crunchy sweet belle peppers, carrots, cucumbers or try some light pita chips for extra flavor with your creamy eggplant dip.

Author Deb Perelman makes it super easy, roasting the eggplant, then blending with some fresh ingredients. I like to dip in veggies and pita chips, but you could try whatever tickles your fancy. I added a little red pepper to mine, because I like spicy, and some more lemon and parsley for the bright citrus and herby goodness. I ate it for a week, and loved every minute of it. Give it a try, it’s so worth it. AND, it’s super healthy. Hooray!
