Peach 🍑 Avocado 🥑 Salad
It’s stone fruit season and we are all about this sassy Peach Avocado Salad. It’s a little 🌶 spicy, a little 🍑 sweet and a little 🥑 creamy, which is an unbeatable combination for a hot summer day. We’re pretty sure it’s the salad you needed all of your life. 😉
Here’s the recipe:
- 2- 3 peaches or nectarines, ripeness to your liking
- 2 avocados, pitted and cut into slices
- 1 bunch fresh arugula
- 1 red chile pepper – fresno or jalapeno – thinly sliced
- 1/4 cup pistachios, dry roasted
- 1/2 c. fresh mint, chopped or torn
Dressing: - 1 shallot, minced
- 1 red chile pepper – fresno or jalapeno – thinly sliced
- 3 tbsp. fresh lemon juice
- 3 tbsp. olive oil
- 2 tsp. agave
- Salt and pepper to taste
- In a small bowl, whisk together shallots, chili, lemon juice, olive oil and agave.
- Season with salt and pepper.
- Add peaches and toss to coat.
- Let sit for 15 minutes or up to an hour.
- Before serving, plate arugula.
- Add avocado and mint to peach mixture and toss to combine.
- Season with salt and pepper.
- Place peach and avocado mixture liberally over arugula.
- Sprinkle pistachios
- Garnish with mint.
